Lemon chicken
Ingredients
Sauce
- ½ cup lemon juice
- Sugar to taste (at the end)
- 2 tablespoons honey
- 2 teaspoons grated ginger
- 1 cup chicken stock
- 1 teaspoon soy sauce
- 1 tablespoon cornflour (use rice flour for a GF option)
Chicken
- 2 chicken breast fillets
- ½ cup cornflour
- 2 chicken thigh fillets
- 2 eggs, mixed
Method
- Add all sauce ingredients to a saucepan and heat over a medium heat.
- Add 1 table spoon cornflour and 2 tablespoons of water to thicken mixture.
- Add sugar to balance the flavour.
- Remove from heat (you can add to heat again at the end so it is warm)
- Cut chicken into 2 cm pieces or strips.
- Dip chicken in egg and then cornflour.
- Fry chicken in a shallow frypan until cooked (4-5 minutes, tossing and turning).
- Serve with rice and seasonal green vegetables.
