Apple coffee cakes

Cake and coffee

Whip up these tasty apple cakes for coffee break one afternoon.

Ingredients

  • 2 apples, peeled
  • ⅓ cup sultanas
  • ⅓ cup brown sugar
  • 1 cup self-raising flour
  • ¼ cup walnuts
  • 2 tablespoons olive oil spread
  • 2 tablespoons instant coffee
  • 1 tablespoons boiling water
  • 2 eggs lightly beaten
  • 2 tablespoons milk
  • 2 x 150g tubs of vanilla fruche

Method

  1. Pre-heat the oven to 180c
  2. Lightly grease 6 ramekins (or cupcake tray)
  3. Grate the apples into a large bowl with the sultanas, sugar, walnuts and flour and stir well.
  4. Melt olive oil spread in the microwave, add the instant coffee and boiling water to the spread and mix well. Add eggs and milk and combine this to the apple mixture.
  5. Spoon into ramekins or trays and cook for around 20-25 minutes.
  6. Eat warm as they are or serve with fruche or swap it for ice cream for a more indulgent dessert!
