Baked apricot slice

A slice of apricots

Use your apricots fresh from the tree for this baked slice, perfect for afternoon tea or the lunchbox.

Ingredients

  • 200 g apricots
  • 2 cups self-raising flour
  • ½ cup sugar
  • ¾ cup shredded coconut
  • 185g butter, melted

Method

  1. Soak apricots in hot water for 2 hours then drain.
  2. Add sifted flour, sugar and coconut. Pour over melted butter.
  3. Mix well and press into a greased 30 cm x 20 cm slice tin. Bake at 180C for 25 minutes. Remove from oven and leave in tray to cool.
  4. Cut into squares once cooled and enjoy.
