Banana blueberry pancakes
Ingredients
- 1 banana, pureed
- 1 egg
- 2 tablespoons milk
- 2 tablespoons self raising flour
- Small handful of blueberries, squashed or pureed (optional)
- Sprinkle cinnamon (optional)
Method
- Mix all ingredients in a bowl to combine and whisk out any flour lumps.
- Grease a fry pan with a small amount of baking spray, oil or butter. Spoon 1-2 tablespoons of mixture into the pan to make small circular pancakes.
- Cook for a few minutes each side, flipping once the first side becomes firm. Remove from the pan.
- Enjoy warm or refrigerate and eat cold or re-heated.
