Chutney with fruit and veg

Supremo chutney

Too many apples, chillies, capsicums or tomatoes? Cook them into this delicious chutney that you can have with curries, wraps, pies or cheese.

Ingredients

  • 1 kg ripe tomatoes, chopped
  • ½ kg green tomatoes, chopped
  • 3 large red capsicums, chopped
  • I large brown onion, chopped
  • 3 green apples, peeled, cored and chopped
  • 10 red chillies, chopped
  • 1 teaspoon salt
  • 1 tablespoon mustard seeds
  • 1 tablespoon ground all spice
  • 3 teaspoons cracked black pepper
  • 1 cup white sugar
  • 1¼ cup red wine vinegar
  • ¼ cup balsamic vinegar
  • Splash of olive oil

Method

  1. In a large pot, cook the capsicums, onions and chilli with a splash of olive oil. Stir gently with a wooden spoon.
  2. Add apples, tomatoes and the rest of the ingredients.
  3. Mix it all together and allow it to simmer for about an hour while stirring occasionally. Keep cooking until it has thickened.
  4. Pour into sterilised jars, seal and leave for four to six weeks before eating OR blend it all up with a mixer until smooth while still hot and pour into sterilised sauce bottles.
