Oat cookies with fruit
Ingredients
- 1 large ripe banana, mashed
- 1 cup of quick oats
- 1 egg
- ¼ cup oil
- ½ cup desiccated coconut
- ½ cup self-raising wholemeal flour
- 1tsp cinnamon
- 1 apple, finely diced
Note: can add either 1 teaspoon of honey, 3 tablespoons of peanut butter, ½ a cup of sultanas, ½ cup of diced berries/stone fruits or 1 teaspoon of vanilla essence.
Method
- Preheat oven to 180 degrees and line a baking tray with baking paper.
- In a bowl mix together banana, oats, egg and oil.
- Stir in coconut, flour, cinnamon and extra ingredient (if adding). Fold in apple.
- Roll tablespoons of mixture with your hands and flatten on baking tray.
- Bake for 13-15 minutes, turn each cookie over after the first 10 minutes.
- Allow to cool. Eat straight away, place in lunchboxes or freeze and use within 2 months.
