Hot avocados with melted cheese and jalapenos

A spicy snack

Grill avocados on the barbeque topped with cheese and jalapenos.

Ingredients

  • 1 tablespoons extra virgin olive oil
  • 1 tablespoons unsalted butter
  • 1 small onion, sliced
  • 1 small capsicum, sliced
  • 2 jalepenos
  • 2 avocados, ripe, slightly soft to the touch
  • 1 teaspoon cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked pepper
  • 4 x ¼ inch slices of mature cheddar cheese (or extra sharp cheddar)

Method

  1. Thinly slice the onions, jalepenos and capsicum.
  2. In as small pan over low heat,  add the butter and olive oil. Once the butter has melted, add the onion, jalepeno and pepper. Cook for approximately 10 minutes, stirring periodically.
  3. Peel and remove the stone from the avocado and place the avocado slice with the pit skin side down.
  4. Mix together the cumin, salt, and pepper. Sprinkle evenly over the avocado flesh
  5. Add equal amounts of the onion/pepper mixture to the tops of the 4 avocados halves.
  6. Grill the avocados over direct medium heat with the lid closed for approximately 20-25 minutes in a Weber (or grill), until the avocado is soft when pressed.
  7. Add the cheese to each avocado, close the lid, and grill for another 5 minutes, or until the cheese has melted. Remove and serve.
