Lemon muffins

Lemon muffins

Use your extra lemons to bake these morning tea treats.

Ingredients

Batter

  • 2 cups self-raising flour
  • ¾ cup sugar
  • 75g butter
  • 1 cup milk
  • 1 egg
  • Grated rind of 2 small lemons

Topping

  • ¼ cup lemon juice
  • ¼ cup sugar

Method

  1. Place flour and sugar in bowl and mix.
  2. Melt butter, add to milk, egg and lemon rind. Beat with a fork to combine.
  3. Gently mix wet and dry ingredients together until lightly dampened but not thoroughly mixed.
  4. Spoon into greased muffin tin, cook in oven at 200 °C for 10 minutes. Test when cooked.
  5. Spoon topping over muffins as soon as they come out of the oven. Leave only a few minutes and remove from tins to cool.
