Mango oat pudding

Simple mango snack

Whip up this simple but delicious mango oat pudding ideal for packing for a work breakfast or school lunchbox snack.

Ingredients

Make this recipe in advance. Lasts five days in the fridge.

  • ½ cup oats
  • ½ cup almond milk
  • 1 t chia seeds
  • 2 tablespoon low fat vanilla yoghurt – no sugar added
  • 4 small frozen mango pieces
  • Honey (to drizzle on top)

Method

  1. Mix the oats, milk and yoghurt in a bowl.
  2. Stir in the chia seeds.
  3. Serve in a bowl and add mango pieces on top
  4. Drizzle with honey.
