Orange and almond cake

Orange you glad we have these helpful ideas to use up your excess fruit? (pun intended!).

Get your bake on! If your fruit bowl is chock full of oranges, use them up in this delicious orange and almond cake (also it’s dairy and gluten free!).

Serves 8 to 12

Ingredients

  • 2 large oranges
  • 40g flaked almonds
  • 250g caster sugar
  • 5 large eggs
  • 250g almond meal
  • 1tsp baking powder

Method

  1. Cut top and bottom of oranges and place in medium sized pot filled ¾ full with water and bring to boil. Turn down and simmer for 2 hours.
  2. Preheat oven to 160*c and line the bottom of 23cm spring form cake tin with baking paper.
  3. Place eggs and sugar in food processor and blend for 2 minutes.
  4. Cut oranges into quarters and place in food processor and blend for 3 minutes.
  5. Add almond meal and baking powder and blend for a further 2 minutes.
  6. Pour into cake tin and spread flaked almonds evenly on top and place cake into oven and bake for 1 to 1 ¼ hours
  7. Let cool completely before serving (1-2 hours).

Decorations

If you would like candied oranges to decorate your cake.

  • Reserve 1 ½ cups of liquid from poaching oranges
  • Add to wide based pan with ½ cup white crystallised sugar
  • Heat until sugar is dissolved
  • Cut ends off one orange
  • Slice orange into ½ cm slices
  • Place orange slices into pan with dissolved sugar liquid
  • Leave on medium heat for about 20 mins turning slices at half time
  • Reduce heat to low and continue to cook until liquid has thickened to a sticky consistency – about 10 mins
  • Remove orange slices to wire rack to cool
  • Arrange on top of cake
