Rosemary and lemon chicken

Roast with a lemon punch

Use your preserved lemons for a comforting yet punchy roast chicken.

Ingredients

  • 8 chicken drumsticks or 4 maryland
  • 1 preserved lemon, finely chopped (if you prefer a more subtle taste, rinse the lemon and remove the flesh, chopping the skin only)
  • 1-2 sprigs of Rosemary, finely chopped
  • ½ cup of olive oil

Method

  1. Mix the preserved lemon, rosemary and olive oil in a large bowl.
  2. Coat each drumstick in the mixture.
  3. Place the drumsticks in a large roasting tray.
  4. Spoon remaining mixture on top of each drumstick.
  5. Roast in the oven at 220 degrees for 40 minutes.
