Strawberry oat slices

Berry good snack

Try these strawberry oatmeal slices for a mid-morning snack on the go.

Ingredients

  • 2 cups fresh strawberries, chopped
  • 1 cup of rolled oats
  • ¾ cup wholemeal flour
  • ⅓ cup brown sugar
  • ¼  teaspoon ground ginger
  • 6 tablespoons unsalted melted butter (or use vegetable or coconut oil for dairy free)
  • 1 teaspoons cornflour
  • 1 teaspoons lemon juice
  • 1 tablespoons granulated sugar

Glaze

  • ½  cup icing sugar sifted
  • ½  teaspoon vanilla essence
  • 1 tablespoon milk (or water to keep it dairy-free)

Method

  1. Pre-heat the oven to 180°.
  2. Line a 20cm x 20cm baking tin with baking paper.
  3. In a large bowl, mix the flour, brown sugar, ginger and salt and pour in the melted butter.
  4. Spread half of this mixture into the tin.
  5. Sprinkle over half of the chopped strawberries and sprinkle the cornflour, granulated sugar and lemon juice on top of this.
  6. Add the remaining strawberries and cover these with the remaining oat mix.
  7. Cook for around 40 minutes until golden brown.
  8. Once cooked, place on a wire rack to cool.
  9. Mix all the glaze ingredients together and slowly pour over the slice once it has completely cooled.
  10. Cut into squares when you're ready to eat.
