Tomato and chilli sauce

Get saucy this Summer

Delicious tomato and chilli sauce is a great way to use up seasonal tomatoes and perfect for freezing for a quick mid-week meal with veggies and pasta or add meat for a delicious Bolognese sauce.

Ingredients

  • 500g home grown tomatoes, peeled and chopped
  • 2 brown onions, finely chopped
  • 2 shallots, finely chopped
  • 4 chillies, finely chopped (we used a mixture of jalepenos and birdseye chillies for a very punchy sauce!)
  • 1 cup sugar
  • 2 tablespoons tomato paste
  • ½ cup water
  • salt and pepper to taste

Method

  1. Place tomatoes, onions, shallots and chillies into a large saucepan and slowly bring to the boil. Add water and boil for one hour.
  2. Blend the mixture with a stick blender until runny.
  3. Add sugar and stir, reducing the heat to a simmer.
  4. Add tomato paste, salt and pepper and simmer for around 2 hours.
  5. Serve or store in the fridge or freezer for later use.
