Tomato and chilli sauce
Ingredients
- 500g home grown tomatoes, peeled and chopped
- 2 brown onions, finely chopped
- 2 shallots, finely chopped
- 4 chillies, finely chopped (we used a mixture of jalepenos and birdseye chillies for a very punchy sauce!)
- 1 cup sugar
- 2 tablespoons tomato paste
- ½ cup water
- salt and pepper to taste
Method
- Place tomatoes, onions, shallots and chillies into a large saucepan and slowly bring to the boil. Add water and boil for one hour.
- Blend the mixture with a stick blender until runny.
- Add sugar and stir, reducing the heat to a simmer.
- Add tomato paste, salt and pepper and simmer for around 2 hours.
- Serve or store in the fridge or freezer for later use.
