Vegetable pasta sauce
Ingredients
- 800gms tomatoes, quartered
- 200gms zucchini, chopped
- 1 large brown onion, peeled and quartered
- 2 garlic cloves, peeled
- 80gms sundried tomatoes
- 80gms pitted black olives
- 10gms olive oil
- 2 teaspoons raw sugar
- 1 teaspoon vegetable stock paste (or 1 cube)
- 2 sprigs fresh basil
- 2 tablespoons tomato paste
Method
- Add onion and garlic to a food processor (or Thermomix), chop until fine.
- Use oil in a pan to sauté the onion and garlic.
- Place remaining ingredients into the food processor and chop until fine.
- Place all ingredients into a saucepan and gently simmer the sauce for 20mins.
- Use immediately with pasta or place in sterilized jars until ready to use.
- Pasta sauce can also be frozen.
- Other vegetables can also be used with this recipe, carrot, cauliflower, red capsicum or mushrooms.
