Vegetable pasta sauce

Sauce for Summer

Preserve or freeze your summer vegetables into an easy pasta sauce ready to go.

Ingredients

  • 800gms tomatoes, quartered
  • 200gms zucchini, chopped
  • 1 large brown onion, peeled and quartered
  • 2 garlic cloves, peeled
  • 80gms sundried tomatoes
  • 80gms pitted black olives
  • 10gms olive oil
  • 2 teaspoons raw sugar
  • 1 teaspoon vegetable stock paste (or 1 cube)
  • 2 sprigs fresh basil
  • 2 tablespoons tomato paste

Method

  1. Add onion and garlic to a food processor (or Thermomix), chop until fine.
  2. Use oil in a pan to sauté the onion and garlic.
  3. Place remaining ingredients into the food processor and chop until fine.
  4. Place all ingredients into a saucepan and gently simmer the sauce for 20mins.
  5. Use immediately with pasta or place in sterilized jars until ready to use.
  6. Pasta sauce can also be frozen.
  7. Other vegetables can also be used with this recipe, carrot, cauliflower, red capsicum or mushrooms.
